Description

🧂 Ingredients:

  • Garlic – 1 cup (peeled)

  • Tamarind – 1 lemon-sized ball (soaked in warm water)

  • Red chili powder – 1 tbsp

  • Mustard seeds – 1 tsp

  • Fenugreek seeds – ½ tsp (roasted and powdered)

  • Turmeric powder – ½ tsp

  • Salt – to taste

  • Gingelly oil (Indian sesame oil) – ½ cup

  • Asafoetida (hing) – a pinch

🔪 Instructions:

  1. Prepare Tamarind:

    • Extract thick tamarind pulp and set aside.

  2. Fry Garlic:

    • Heat oil in a pan, add garlic, and sauté until golden. Remove and cool.

  3. Temper Spices:

    • In the same oil, add mustard seeds. Let them splutter.

    • Add asafoetida, turmeric, red chili powder, fenugreek powder.

  4. Combine:

    • Add tamarind pulp and salt. Cook until the mixture thickens and oil starts to separate.

    • Add fried garlic and cook for 2-3 minutes more.

  5. Cool & Store:

    • Let it cool completely. Store in a dry, sterilized jar. Keep refrigerated.
