Description

Pad Thai is a dish of fried noodles with toppings combining sweet (white or palm sugar, in the US ketchup is also used), sour (vinegar, lime or tamarind) and salty (fish sauce or salt) flavors. It is a combination of soft rice noodles, pickled vegetables, crispy bean sprouts, peanuts, fried tofu, dried shrimp, and any meat or seafood. This dish is prepared in a flat pan, not a wok. Chicken, pork, shrimp and tofu are often used as additional ingredients. Beef, squid or octopus can also be used. Depending on regional varieties, the cook may add ground chili or mild paprika for color.

The paste is ideal for preparing classic Pad Thai with rice noodles, shrimp, chicken, tofu, bean sprouts, egg and peanuts. Just add 3–4 tablespoons of paste per portion for 2–3 people.
