Garlic Pickle
Description
🧂 Ingredients:

Garlic – 1 cup (peeled)

Tamarind – 1 lemon-sized ball (soaked in warm water)

Red chili powder – 1 tbsp
-
Mustard seeds – 1 tsp
-
Fenugreek seeds – ½ tsp (roasted and powdered)
-
Turmeric powder – ½ tsp
-
Salt – to taste

Gingelly oil (Indian sesame oil) – ½ cup
-
Asafoetida (hing) – a pinch
🔪 Instructions:

Prepare Tamarind:

Extract thick tamarind pulp and set aside.

Fry Garlic:

Heat oil in a pan, add garlic, and sauté until golden. Remove and cool.

Temper Spices:

In the same oil, add mustard seeds. Let them splutter.

Add asafoetida, turmeric, red chili powder, fenugreek powder.

Combine:

Add tamarind pulp and salt. Cook until the mixture thickens and oil starts to separate.

Add fried garlic and cook for 2-3 minutes more.

Cool & Store:

Let it cool completely. Store in a dry, sterilized jar. Keep refrigerated.
